- 1 lb chicken breast, sliced
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice vinegar

- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup water
- 2 tbsp sugar
- 2 cups broccoli florets
- 2 green onions, chopped
- 2 tbsp sesame seeds
- 1 tbsp vegetable oil
Steps
- 1 Cook udon noodles according to package instructions; drain and set aside.
- 2 In a large skillet, heat vegetable oil over medium heat. Add chicken and cook until browned and cooked through.
- 3 In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, chili garlic sauce, red pepper flakes, garlic, chicken broth, water, and sugar until smooth.
- 4 Pour the sauce over the cooked chicken, stirring to combine. Add broccoli and cook until tender.
- 5 Add cooked udon noodles to the skillet, tossing to coat with sauce.
- 6 Serve garnished with chopped green onions and sesame seeds.
