- 2 cloves garlic, minced
- 1/2 cup frozen peas and carrots blend
- 2 large eggs, beaten
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tsp sesame oil
- 2 green onions, chopped
- 1/4 tsp black pepper
- Salt to taste
Steps
- 1 Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add diced pork and cook until browned.
- 2 Remove pork from skillet and set aside.
- 3 In the same skillet, add the remaining tablespoon of oil. Beat eggs and pour into skillet, scrambling until just set.
- 4 Push eggs to the side and add minced garlic, sauté for about 30 seconds until fragrant.
- 5 Add peas and carrots, stirring to heat through.
- 6 Add cooked rice to the skillet, breaking up any clumps.
- 7 Stir in soy sauce, honey, and sesame oil. Mix well.
- 8 Return the pork to the skillet and toss to combine.
- 9 Season with black pepper and salt to taste.
- 10 Garnish with chopped green onions before serving.
