- 1 clove garlic, minced
- 1 tablespoon honey
Steps
- 1 Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Fluff with a fork and set aside.
- 2 Season chicken with oregano, salt, and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 6-7 minutes per side.
- 3 In a large bowl, combine cucumber, cherry tomatoes, red onion, and parsley.
- 4 For the dressing, whisk together tahini, lemon juice, garlic, honey, and remaining olive oil in a small bowl.
- 5 To assemble, divide quinoa among four bowls. Top with the vegetable mixture, grilled chicken, and feta cheese. Drizzle with tahini dressing.
