- 1 small onion, diced
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) butter beans, drained and rinsed
- 2 cups fresh spinach, roughly chopped
- 1/2 cup vegetable broth
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt, to taste
- Freshly ground black pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
Steps
- 1 Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 3 minutes.
- 2 Stir in garlic and cook for another minute.
- 3 Add diced tomatoes, butter beans, vegetable broth, oregano, and basil. Bring to a simmer.
- 4 Stir in spinach and cook until wilted, about 2 minutes.
