Classic Buckeyes

- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 1/2 cups powdered sugar
- 1 (12 oz) package semi-sweet chocolate chips
- 1 tablespoon coconut oil or shortening
Steps
- 1 In a large bowl, beat peanut butter, butter, and vanilla until smooth.
- 2 Gradually beat in powdered sugar until well combined.
- 3 Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
- 4 In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
- 5 Dip each peanut butter ball into melted chocolate, leaving the top third exposed, and place back on the baking sheet.
- 6 Let chocolate set at room temperature or chill in the fridge for faster setting.
