- 1 lb pork loin, thinly sliced
- 1 ½ cups uncooked jasmine rice
- 2 cups water
- ¼ cup gochujang
- 2 tbsp soy sauce
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1 medium onion, diced
- 1 red bell pepper, sliced
- 2 green onions, chopped
- 1 tbsp sesame oil
- 1 tsp toasted sesame seeds
- Salt to taste
- Black pepper to taste
Steps
- 1 Rinse the rice under cold water until the water runs clear. Drain well.
- 2 In the skillet, combine rice and water. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes.
- 3 While the rice cooks, mix gochujang, soy sauce, honey, garlic, and ginger in a small bowl.
- 4 Heat sesame oil in another skillet over medium-high heat. Add pork slices and cook until browned, about 5 minutes.
- 5 Push the pork to one side of the skillet, add onions and bell pepper to the other side, and sauté until softened.
- 6 Pour the gochujang mixture over the pork and veggies, stirring to combine. Simmer for 3-4 minutes.
- 7 Fluff the cooked rice with a fork and add it to the skillet with the pork mixture. Stir gently to combine.
- 8 Garnish with chopped green onions and sesame seeds.
- 9 Season with salt and pepper to taste before serving.
