- 2 tbsp curry powder
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 tsp ground cumin
- 1/2 tsp turmeric
- Salt to taste
- Fresh cilantro for garnish
Steps
- 1 Preheat oven to 400°F.
- 2 In a bowl, whisk together coconut milk, curry powder, cumin, turmeric, and salt.
- 3 Heat olive oil in a pan, sauté onion, garlic, and bell pepper until softened.
- 4 Add the sautéed veggies to the coconut mixture.
- 5 Place a tilapia fillet in the center of each foil packet.
