- 8 oz boneless, skinless chicken breasts, cubed
- 4 slices bacon, chopped
- 2 large eggs
- 1/2 cup grated Parmesan cheese, plus extra for serving
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
- Salt to taste
- 2 tablespoons olive oil
Steps
- 1 Cook spaghetti according to package instructions; reserve 1 cup of pasta water.
- 2 While pasta cooks, cook bacon in a large skillet until crispy; remove and set aside.
- 3 In the same skillet, sauté chicken in olive oil until cooked through.
- 4 Add garlic to the skillet and cook for 1 minute.
- 5 In a bowl, whisk eggs, Parmesan, black pepper, and a pinch of salt.
- 6 Drain pasta and add to skillet with chicken; toss to combine.
- 7 Remove skillet from heat and quickly stir in egg mixture, adding reserved pasta water as needed for consistency.
- 8 Stir in crispy bacon.
- 9 Serve immediately with extra Parmesan on top.
