- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound Italian turkey sausage, casing removed
- 4 cups low-sodium chicken broth
- 1 can (15 ounces) white beans, drained and rinsed
- 2 cups kale, stems removed and chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Juice of 1 lemon
- Parmesan cheese, for serving (optional)
Steps
- 1 Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- 2 Add garlic and cook for another minute.
- 3 Crumble in the sausage and cook until browned, breaking it up with a spoon.
- 4 Stir in the chicken broth, beans, kale, oregano, thyme, and red pepper flakes if using. Season with salt and pepper.
- 5 Bring to a simmer and cook for 15-20 minutes until kale is tender.
- 6 Stir in the lemon juice and adjust seasoning if needed.
