- 12 oz turkey sausage, casing removed
- 1 medium onion, diced
- 1 bell pepper, diced
- 8 oz pasta (penne or rigatoni)
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
Steps
- 1 Preheat oven to 375°F.
- 2 Cook pasta according to package instructions; drain and set aside.
- 3 In a large skillet, heat olive oil over medium heat. Add turkey sausage and cook until browned.
- 4 Add onion and bell pepper to the skillet, sauté until softened.
- 5 Stir in garlic, basil, salt, and pepper. Cook for another minute.
- 6 Mix in marinara sauce and simmer for 5 minutes.
- 7 Combine cooked pasta, ricotta, and half the marinara mixture in a greased baking dish.
- 8 Top with remaining sauce and sprinkle mozzarella and Parmesan over the top.
- 9 Bake uncovered for 25 minutes or until cheese is bubbly and edges are golden.
- 10 Garnish with fresh parsley before serving.
