- 1 ½ cups jasmine rice
- 1 ½ cups water
- 14 oz firm tofu, pressed and cubed
- 2 tbsp sesame oil, divided
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, minced
- 2 cloves garlic, minced
- 2 tbsp sesame seeds
- 1 tbsp cornstarch mixed with 2 tbsp water
- 2 tbsp green onions, chopped
- 1 tbsp sugar
- ¼ tsp crushed red pepper flakes (optional)
- 2 cups broccoli florets
- 1 tbsp toasted sesame oil for garnish
Steps
- 1 Rinse the rice and cook according to package instructions using 1 ½ cups of water.
- 2 While the rice cooks, press and cube the tofu. Heat 1 tablespoon sesame oil in a skillet over medium heat and cook the tofu until crispy on all sides.
- 3 In a small bowl, whisk together soy sauce, rice vinegar, minced ginger, garlic, sugar, and crushed red pepper flakes.
- 4 Add the sauce to the skillet with the tofu, stirring to coat. Add the cornstarch slurry and cook until the sauce thickens.
- 5 Steam the broccoli florets until tender-crisp.
- 6 Assemble the bowls with steamed rice, tofu, and broccoli. Sprinkle with sesame seeds and chopped green onions.
- 7 Drizzle with a bit of toasted sesame oil before serving.
