- 8 ounces chorizo sausage, casing removed
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 1/2 cups uncooked long-grain rice
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) whole kernel corn, drained
- 2 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1 1/2 cups shredded cheddar cheese
- Salt and pepper to taste
- 2 tablespoons chopped fresh cilantro (optional)
Steps
- 1 Preheat oven to 375°F.
- 2 Heat olive oil in a large skillet over medium heat. Add chorizo and cook until browned.
- 3 Remove chorizo with a slotted spoon and set aside. In the same skillet, sauté onion and bell pepper until softened.
- 4 Add garlic and cook for 1 minute. Stir in rice, coating it with the oil mixture.
- 5 Combine chorizo, black beans, corn, chicken broth, cumin, chili powder, and smoked paprika in a large baking dish.
- 6 Top with sautéed onion and pepper mixture. Cover with foil and bake for 30 minutes.
- 7 Remove foil, sprinkle with cheese, and bake uncovered for another 10 minutes or until cheese is melted.
- 8 Let stand for 5 minutes before serving. Garnish with cilantro if desired.
