- 12 oz pasta (spaghetti or linguine)
- 2 tbsp unsalted butter
- 2 cups heavy cream
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 oz uni (sea urchin) roe, more for garnish
- 1/4 cup grated Parmesan cheese
- Salt, to taste
- Freshly ground black pepper, to taste
- Chopped chives, for garnish
Steps
- 1 Cook pasta in a large pot of salted boiling water according to package instructions until al dente.
- 2 While pasta cooks, heat butter and olive oil in a large skillet over medium heat.
- 3 Add minced garlic and sauté until fragrant, about 1 minute.
- 4 Pour in heavy cream and bring to a gentle simmer.
- 5 Stir in Parmesan cheese until melted and sauce is smooth.
- 6 Drain pasta, reserving 1/2 cup pasta water, and add to the skillet.
- 7 Gently fold in uni roe and cook for 1-2 minutes over low heat until heated through.
- 8 Season with salt and pepper to taste, adding pasta water if needed to reach desired consistency.
- 9 Serve immediately, garnished with additional uni and chopped chives.
