- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
- Tortillas, warmed (for serving)
Steps
- 1 Preheat oven to 400°F.
- 2 In a large bowl, toss shrimp with paprika, chili powder, cumin, salt, and pepper.
- 3 Spread shrimp in a single layer on a sheet pan.
- 4 Arrange sliced bell peppers and onions around the shrimp.
- 5 Bake for 10 minutes.
- 6 In a small saucepan, melt butter over medium heat. Add minced garlic and cook until fragrant.
- 7 Remove sheet pan from oven and drizzle garlic butter over shrimp and veggies.
- 8 Return to oven for another 5 minutes or until shrimp are pink and veggies are tender.
- 9 Squeeze lime juice over the top.
- 10 Garnish with cilantro.
- 11 Serve with warm tortillas.
