- 1/2 cup packed brown sugar
- 1/4 cup Dijon mustard
- 2 tablespoons whole mustard seeds
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup orange juice
- 1/4 cup apple cider vinegar
- 4 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary, chopped
- Salt to taste
- Freshly ground black pepper to taste
- 1/2 cup water
Steps
- 1 Preheat oven to 325°F.
- 2 Score the surface of the ham in a diamond pattern, taking care not to cut too deeply.
- 3 In a small saucepan, combine brown sugar, Dijon mustard, mustard seeds, cloves, cinnamon, nutmeg, orange juice, apple cider vinegar, garlic, thyme, and rosemary. Simmer over medium heat until slightly thickened.
- 4 Place ham in a roasting pan and pour half of the glaze over it.
- 5 Add water to the bottom of the pan to prevent drying.
- 6 Cover with foil and bake for 90 minutes.
- 7 Uncover, brush with remaining glaze, and bake for another 30 minutes, basting occasionally.
- 8 Let rest for 15 minutes before carving.
