- 1/4 cup diced green bell pepper
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup milk
- 1 tablespoon all-purpose flour
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Steps
- 1 Preheat oven to 425°F.
- 2 Spread frozen fries on a baking sheet and bake for 15 minutes.
- 3 Meanwhile, cook chorizo in a skillet over medium heat until browned and crispy.
- 4 Remove chorizo and set aside, leaving drippings in the skillet.
- 5 Add onion, bell pepper, and garlic to the skillet and sauté until softened.
- 6 Stir in chili powder and cumin, cooking for another minute.
- 7 Mix flour into the milk and pour into the skillet, stirring constantly until thickened.
- 8 Reduce heat and mix in cheeses until melted and smooth.
- 9 Remove fries from oven and top with cheese sauce and crumbled chorizo.
- 10 Return to oven for 5 minutes, until cheese is bubbly.
- 11 Garnish with cilantro before serving.
