- 1/4 cup sun-dried tomatoes (oil-packed, drained and chopped)
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt to taste
- Freshly ground black pepper to taste
- 1/4 tsp red pepper flakes (optional)
- Fresh basil for garnish
Steps
- 1 Cook gnocchi according to package instructions until tender. Drain and set aside.
- 2 In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- 3 Add sun-dried tomatoes and cook for another minute.
- 4 Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and sauce is smooth.
