- 8 oz feta cheese, crumbled
- 10 oz fresh spinach, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 1 large egg, beaten (for egg wash)
- 1 tablespoon milk
- 1 tablespoon sesame seeds (optional)
Steps
- 1 Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- 2 In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- 3 Add spinach and red pepper flakes, cooking until spinach is wilted. Season with salt and pepper.
- 4 Unfold puff pastry sheet on a floured surface. Spread crumbled feta evenly over the pastry.
- 5 Top feta with the spinach mixture, leaving a 1-inch border around the edges.
- 6 Starting from one end, tightly roll the pastry into a log. Slice into 12 equal pieces.
- 7 Place swirls cut-side up on the prepared baking sheet. Whisk egg with milk for egg wash.
- 8 Brush swirls with egg wash and sprinkle with sesame seeds, if using.
- 9 Bake for 20 minutes or until golden brown. Let cool for 5 minutes before serving.
