- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, cut into wedges
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lemon
Steps
- 1 Preheat oven to 400°F.
- 2 In a large bowl, toss all the vegetables with minced garlic, olive oil, parsley, thyme, oregano, salt, and pepper until well coated.
- 3 Spread the vegetables in a single layer on a sheet pan.
- 4 Roast in the preheated oven for 30 minutes, stirring halfway through, until vegetables are tender and slightly caramelized.
- 5 Remove from the oven and drizzle with lemon juice.
