- 8 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lime zest
- 2 tbsp fresh lime juice
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Steps
- 1 Preheat oven to 400°F.
- 2 Pat chicken thighs dry and place on a sheet pan.
- 3 Whisk together olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper in a small bowl.
- 4 Brush the spice mixture evenly over the chicken.
- 5 Sprinkle lime zest over the chicken.
- 6 Roast in the preheated oven for 30 minutes or until chicken is cooked through.
- 7 Remove from oven and drizzle with lime juice.
- 8 Garnish with chopped cilantro.
- 9 Serve with lime wedges on the side.
