- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 green chilies, sliced
- 1 red bell pepper, sliced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1 cup diced tomatoes
- 1/2 cup water
- Salt to taste
- Fresh cilantro, chopped for garnish
Steps
- 1 Heat oil in a large skillet over medium-high heat.
- 2 Add chicken and cook until browned, then remove and set aside.
- 3 In the same skillet, sauté onion until softened.
- 4 Add garlic, ginger, and green chilies; cook for 1 minute.
- 5 Stir in bell pepper, turmeric, cumin, coriander, and cayenne; cook for another minute.
- 6 Return chicken to skillet and add tomatoes and water.
- 7 Simmer for 15-20 minutes until sauce thickens.
- 8 Season with salt to taste.
- 9 Serve garnished with cilantro.
