- 1 packet taco seasoning
- 1 cup frozen corn
- 1 cup salsa
- 8 ounces cream cheese, cubed
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 2 cups crushed tortilla chips
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1/4 cup sliced green onions
Steps
- 1 Preheat oven to 375°F.
- 2 Brown ground beef in a skillet, drain excess fat, and season with taco seasoning and cumin.
- 3 Stir in frozen corn and salsa, cook for 2 minutes.
- 4 In a greased 9x13 inch baking dish, spread half the beef mixture.
- 5 Dot with cream cheese cubes and layer with sour cream.
- 6 Add a layer of crushed tortilla chips.
- 7 Top with remaining beef mixture and sprinkle with cheddar cheese.
- 8 Bake for 20-25 minutes, or until cheese is bubbly.
