Servings:

Steps

  1. 1 Rinse the rice under cold water and drain.
  2. 2 Season the chicken pieces with 1 tablespoon of Cajun seasoning, salt, and pepper.
  3. 3 Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned, about 5 minutes per side. Remove and set aside.
  4. 4 In the same skillet, add the diced onion, bell pepper, and garlic. Sauté until softened, about 5 minutes.
  5. 5 Stir in the remaining 1 tablespoon of Cajun seasoning, smoked paprika, and cayenne pepper.
  6. 6 Add the rice to the skillet and toast for 1-2 minutes, stirring constantly.
  7. 7 Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
  8. 8 Return the chicken to the skillet, cover, and simmer for 20 minutes.
  9. 9 Stir in the frozen peas and cook for another 5 minutes, or until the rice is tender and the peas are heated through.
  10. 10 Garnish with chopped parsley if desired, and serve.
