- 1 cup uncooked quinoa
- 2 cups water
- 2 cups broccoli florets, chopped
- 1 cup shredded sharp cheddar cheese
- 1 cup milk
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 1/2 cup breadcrumbs
Steps
- 1 Preheat oven to 375°F.
- 2 In a medium saucepan, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes. Fluff with a fork and set aside.
- 3 In a large bowl, whisk together milk, eggs, garlic powder, onion powder, salt, and pepper.
- 4 Fold in the cooked quinoa, broccoli, and 3/4 cup of cheddar cheese until well combined.
- 5 Transfer mixture to a greased 9x13 inch baking dish.
- 6 Dot the top with butter and sprinkle with breadcrumbs and remaining cheddar.
- 7 Bake for 25-30 minutes, or until bubbly and golden brown.
- 8 Let stand for 5 minutes before serving.
