- 2 cups water
- 1 head broccoli, cut into florets
- 1 cup shredded sharp cheddar cheese
- 1/2 cup milk
- 2 large eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- 1/4 cup breadcrumbs (optional)
Steps
- 1 Rinse quinoa under cold water. In a skillet, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
- 2 While quinoa cooks, steam broccoli until tender but still vibrant green.
- 3 In a small bowl, whisk together milk, eggs, garlic powder, onion powder, smoked paprika, salt, and pepper.
- 4 Once quinoa is cooked, fluff with a fork and stir in the steamed broccoli.
- 5 Make wells in the quinoa mixture and pour the egg mixture over, then sprinkle with cheddar cheese.
- 6 Dot with olive oil and cover skillet with a lid or foil. Cook for another 10 minutes until eggs are set and cheese is melted.
- 7 For a crispy top, sprinkle breadcrumbs over the top and broil for 2-3 minutes until golden.
- 8 Serve hot directly from the skillet.
