- 1 cup couscous
- 1 1/4 cups water
- 1 medium cucumber, diced
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon honey
- Salt and pepper to taste
- 1/2 teaspoon cumin

- 1 Bring water to a boil in a medium saucepan. Add couscous, cover, and remove from heat. Let sit for 5 minutes.
- 2 Fluff couscous with a fork and transfer to a large bowl to cool.
- 3 Add cucumber, cherry tomatoes, red onion, and parsley to the couscous.
- 4 In a small bowl, whisk together olive oil, red wine vinegar, honey, cumin, salt, and pepper.
- 5 Pour the dressing over the couscous mixture and toss to combine.

- 7 Chill for at least 30 minutes before serving.
