- 2 large onions, thinly sliced
- 2 tbsp olive oil
- 1 tsp sugar
- 8 oz mixed vegetables (zucchini, bell peppers, cherry tomatoes), chopped
- 2 cups shredded Gruyère cheese
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Steps
- 1 Preheat oven to 400°F. Toss vegetables with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
- 2 Heat remaining olive oil in a large skillet over medium heat. Add onions and sugar, cook until caramelized, about 20 minutes.
- 3 Meanwhile, cook tagliatelle according to package directions until al dente.
- 4 Drain pasta and return to pot. Stir in caramelized onions and roasted vegetables.
- 5 Mix in shredded Gruyère until melted and everything is well combined.
- 6 Serve immediately, garnished with fresh parsley.
