- 1 cup couscous
- 1 1/4 cups water
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 cup dried golden raisins
- 1/4 cup sliced almonds, toasted
- 1/4 cup diced red bell pepper
- 1/4 cup diced green bell pepper
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh cilantro
- Zest of one orange
Steps
- 1 Preheat oven to 375°F (190°C).
- 2 In a medium bowl, mix couscous, water, cumin, coriander, cinnamon, cayenne, and salt. Cover and let sit for 5 minutes.
- 3 Fluff couscous with a fork. Stir in golden raisins, almonds, bell peppers, olive oil, cilantro, and orange zest.
- 4 Transfer mixture to a greased 8x8 inch baking dish.
- 5 Bake for 25-30 minutes, until heated through and slightly crispy on top.
- 6 Remove from oven and let stand for 5 minutes before serving.
