- 1 pound bulk breakfast sausage
- 4 cups peeled and diced potatoes
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 medium onion, diced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 3 large eggs
- Salt and pepper to taste
- 2 tablespoons olive oil

- 1 Preheat oven to 375°F.
- 2 Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned; drain excess fat.
