- 1 lb chicken breast, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 tbsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt to taste
- Fresh lime juice to finish
- Fresh cilantro, chopped for garnish
Steps
- 1 Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- 2 Add the sliced chicken and cook until browned and cooked through, about 6-7 minutes. Remove and set aside.
- 3 Add the remaining olive oil to the skillet, then sauté the onions and bell peppers until tender, about 5 minutes.
- 4 Stir in chili powder, cumin, paprika, and salt.
- 5 Return the chicken to the skillet, toss to combine, and cook for another 2 minutes.
- 6 Finish with a squeeze of fresh lime juice and garnish with cilantro.
