Steps
- 1 Preheat oven to 375°F.
- 2 Roll out puff pastry and press into a 9-inch tart pan with removable bottom.
- 3 In a skillet, heat olive oil and butter over medium heat. Sauté onion until translucent.
- 4 Add mushrooms, garlic, thyme, and a pinch of salt and pepper. Cook until mushrooms are tender and liquid has evaporated.
- 5 Stir in parsley and remove from heat.
- 6 In a bowl, whisk together eggs and heavy cream. Season with salt and pepper.
- 7 Spread mushroom mixture evenly over pastry. Pour egg mixture over mushrooms.
- 8 Sprinkle Parmesan cheese on top.
- 9 Bake for 30 minutes or until crust is golden and filling is set.
- 10 Let cool slightly before removing from pan.
