- 1 can (10 oz) red enchilada sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
- 1 cup shredded cheddar cheese
- 1 cup crushed Doritos (nacho cheese flavor)
- 8 corn tortillas, cut into quarters
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/4 cup chopped cilantro for garnish
Steps
- 1 Preheat oven to 375°F.
- 2 In a large bowl, mix shredded chicken, enchilada sauce, black beans, corn, diced onion, bell pepper, cumin, chili powder, salt, and pepper.
- 3 Spread a thin layer of the mixture in a greased 9x13 inch baking dish.
- 4 Top with a layer of tortilla quarters, followed by a sprinkle of crushed Doritos and cheddar cheese.
- 5 Repeat layers until all ingredients are used, ending with a layer of crushed Doritos and cheese on top.
- 6 Bake uncovered for 30 minutes, or until the edges are bubbly and the cheese is melted.
- 7 Garnish with cilantro before serving.
