- 1 can (10 oz) red enchilada sauce
- 1 can (4 oz) diced green chilies
- 2 tbsp chipotle chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1 cup sour cream
- 1/2 cup milk
- 1/4 cup chopped cilantro (optional)
Steps
- 1 Preheat oven to 375°F.
- 2 Cook tortellini according to package instructions until al dente; drain.
- 3 In a large bowl, combine cooked tortellini, black beans, corn, spinach, enchilada sauce, green chilies, chipotle chili powder, cumin, and smoked paprika.
- 4 In a separate small bowl, mix sour cream and milk until smooth.
- 5 Pour sour cream mixture over tortellini mixture and stir to combine.
- 6 Transfer mixture to a greased 9x13 inch baking dish.
- 7 Top with cheddar and Monterey Jack cheese.
