- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 ½ cups crushed Doritos (nacho flavor)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 cup sour cream
- 1 cup diced tomatoes
- ½ cup chopped green onions
- ¼ cup chopped cilantro
- 2 cups cooked chicken, shredded (optional)
- Salt and pepper to taste
Steps
- 1 Preheat oven to 375°F.
- 2 In a greased 9x13 inch baking dish, spread ½ cup enchilada sauce to cover the bottom.
- 3 Layer ½ cup crushed Doritos over the sauce.
- 4 In a large bowl, mix cooked chicken (if using), black beans, corn, sour cream, and diced tomatoes. Spoon over Doritos layer.
- 5 Sprinkle with half of each cheese.
- 6 Add another layer of ½ cup crushed Doritos.
- 7 Pour remaining enchilada sauce over the top.
- 8 Top with the rest of the crushed Doritos and cheeses.
- 9 Bake for 30 minutes until bubbly and cheese is melted.
- 10 Garnish with green onions and cilantro before serving.
