- 1 cup BBQ sauce
- 1 cup frozen sweet potato tater tots
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/4 cup barbecue sauce (extra)
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- Salt to taste
- 1/4 cup crumbled bacon (optional)
- Fresh parsley for garnish (optional)
Steps
- 1 Preheat oven to 400°F.
- 2 In a large bowl, combine shredded chicken, 1 cup BBQ sauce, red bell pepper, red onion, smoked paprika, and garlic powder.
- 3 Spread half of the tater tots in a greased 9x13 inch baking dish.
- 4 Layer the chicken mixture over the tater tots.
- 5 Top with remaining tater tots and sprinkle with cheddar cheese.
- 6 Bake for 30-40 minutes until tater tots are golden and cheese is bubbly.
- 7 During last 5 minutes of baking, drizzle extra BBQ sauce over the top.
- 8 Garnish with crumbled bacon and fresh parsley if desired before serving.
