- 1/2 pound ground pork
- 1/2 cup breadcrumbs
- 1 egg
- 2 tablespoons BBQ sauce
- 1 teaspoon smoked paprika

- 8 slices bacon
- 1 large onion, thinly sliced
- 4 sub rolls
- 1/2 cup BBQ sauce (for serving)
- 2 tablespoons olive oil
Steps
- 1 Preheat oven to 400°F.
- 2 In a large bowl, combine beef, pork, breadcrumbs, egg, 2 tablespoons BBQ sauce, smoked paprika, garlic powder, salt, and pepper. Form into 16 meatballs.
- 3 Wrap each meatball with a half slice of bacon.
- 4 Place meatballs on a baking sheet and bake for 20 minutes.
- 5 Meanwhile, heat olive oil in a skillet over medium heat. Add onions and cook until crispy and golden brown.
- 6 Toast sub rolls in the oven for the last 5 minutes of meatball cooking time.
- 7 Slice open sub rolls and add meatballs.
- 8 Top with crispy onions and drizzle with additional BBQ sauce.
