- 2 pounds frozen tater tots
- 1 pound breakfast sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup diced green bell pepper
- 1/2 cup diced red bell pepper
- 1/2 cup diced onion
- 8 large eggs
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh chives
- 1/4 cup diced green onions
- 1/4 cup diced tomatoes
Steps
- 1 Preheat oven to 375°F.
- 2 In a greased 9x13 inch baking dish, spread a single layer of tater tots.
- 3 Top with half of the cooked sausage, half of the cheeses, and half of the diced peppers and onions.
- 4 Add another layer of tater tots.
- 5 In a bowl, whisk together eggs, milk, salt, and pepper. Pour evenly over the tater tots.
- 6 Top with remaining sausage, cheese, and veggies.
- 7 Bake uncovered for 45 minutes or until tater tots are golden and the egg mixture is set.
- 8 Remove from oven and sprinkle with chives, green onions, and diced tomatoes.
- 9 Let stand for 5 minutes before serving.
