- 8 bone-in, skin-on chicken thighs
- 1 1/2 cups panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp paprika
- 1/2 tsp black pepper
- 1 tsp salt
- 1/2 cup melted butter
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
Steps
- 1 Preheat oven to 425°F.
- 2 Pat chicken thighs dry with paper towels and season with salt and pepper.
- 3 In a bowl, mix breadcrumbs, Parmesan, garlic, thyme, paprika, and black pepper.
- 4 Brush each chicken thigh with melted butter, then press into the breadcrumb mixture to coat.
- 5 Heat olive oil in an oven-safe skillet over medium heat. Sear chicken, skin-side down, for 4-5 minutes until golden.
- 6 Transfer skillet to the oven and bake for 25-30 minutes, until chicken is cooked through.
