- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup refried beans
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels, fresh or frozen
- 1 cup diced tomatoes
- 1/2 cup sliced black olives
- 1/2 cup diced green chilies
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional)
Steps
- 1 Preheat oven to 375°F.
- 2 Spread half of the tortilla chips in a 9x13 inch baking dish.
- 3 Top with half of the cheeses, refried beans, black beans, corn, and diced tomatoes.
- 4 Sprinkle with cumin, chili powder, and cayenne pepper if using.
- 5 Layer remaining tortilla chips and top with remaining cheese and vegetables.
- 6 Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
- 7 Remove from oven and let stand for 5 minutes.
- 8 Dollop with sour cream and sprinkle with cilantro before serving.
