- 1 pound ground beef
- 1 (1.25-ounce) packet taco seasoning
- 1 (15-ounce) can tomato sauce
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (4-ounce) can diced green chilies
- 1 cup frozen corn kernels, thawed
- 1 (15-ounce) container ricotta cheese
- 2 cups shredded Mexican blend cheese, divided
- 12 lasagna noodles, uncooked
- 1/4 cup chopped fresh cilantro
Steps
- 1 Preheat oven to 375°F.
- 2 Brown ground beef in a large skillet over medium heat. Drain excess fat.
- 3 Stir in taco seasoning and tomato sauce; simmer for 5 minutes.
- 4 Mix black beans, green chilies, and corn into the beef mixture.
- 5 Spread a thin layer of beef mixture in the bottom of a 9x13 inch baking dish.
- 6 Layer with 3 lasagna noodles, followed by half the ricotta cheese and a third of the Mexican blend cheese.
- 7 Repeat layers once, then top with remaining noodles and beef mixture.
- 8 Sprinkle the rest of Mexican blend cheese on top.
- 9 Cover with foil and bake for 30 minutes. Remove foil and bake another 15 minutes until bubbly and golden.
- 10 Let stand for 10 minutes before garnishing with cilantro and serving.
