- 4 medium sweet potatoes
- 1 lb ground beef
- 6 slices bacon, chopped
- 1/2 cup diced onion
- 1/2 cup shredded cheddar cheese
- 1/4 cup ketchup
- 1 tbsp mustard
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- 2 tbsp olive oil
- Chopped chives for garnish
Steps
- 1 Preheat oven to 400°F.
- 2 Pierce sweet potatoes with a fork and bake for 45 minutes, or until tender.
- 3 While potatoes bake, cook bacon in a skillet until crispy; remove and set aside.
- 4 In the same skillet, add olive oil and cook onion until softened.
- 5 Add ground beef to the skillet, breaking it up with a spoon, and cook until browned.
- 6 Stir in ketchup, mustard, Worcestershire sauce, salt, and pepper; cook for 2 minutes.
- 7 Slice open the baked sweet potatoes and fluff the insides with a fork.
- 8 Stuff each potato with the beef mixture, top with bacon and cheese.
- 9 Return stuffed potatoes to oven for 5 minutes, or until cheese is melted.
- 10 Garnish with chives before serving.
