Roasted Garlic Garlic Aioli

- 1 head garlic
- 1/2 cup mayonnaise (vegan if preferred)
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard

Steps
- 1 Preheat oven to 400°F. Cut off the top of the garlic head to expose the cloves.
- 2 Place the garlic on a square of foil, drizzle with olive oil, and wrap it up. Roast for 30 minutes.
- 3 Once roasted, let it cool slightly, then squeeze out the garlic cloves into a bowl.
- 4 Add mayonnaise, lemon juice, Dijon mustard, salt, and pepper to the roasted garlic.
- 5 Mix until smooth and creamy.
- 6 Taste and adjust seasoning if necessary.
