- 2 slices thick-cut bacon, chopped
- 1 cup grated Parmesan cheese, divided
- 2 large eggs
- 1/4 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (optional)
Steps
- 1 Crack eggs into a bowl, whisk in heavy cream, and set aside.
- 2 In a large skillet, cook bacon over medium heat until crispy. Remove with a slotted spoon and set aside.

- 5 Reserve 1/2 cup pasta water, then drain noodles, leaving them in the skillet.
- 6 Remove skillet from heat, quickly pour in egg mixture while tossing to combine, adding reserved pasta water a splash at a time to reach desired creaminess.
- 7 Stir in Parmesan (reserve some for garnish), butter, and black pepper until sauce is smooth and creamy.
- 8 Toss in cooked bacon, then serve immediately garnished with remaining Parmesan and parsley if desired.
