- 2 tablespoons unsalted butter
- 1/4 cup diced ham or crispy bacon

- 2 scallions, thinly sliced
- Freshly ground black pepper
Steps
- 1 Preheat oven to 425°F. Place butter in a 10-inch oven-safe skillet and put in the oven until melted.
- 2 Whisk together eggs, flour, milk, and salt in a medium bowl until smooth.
- 3 Remove skillet from oven and swirl to coat with melted butter.
- 4 Add ham or bacon to the skillet and pour the batter over it.
- 5 Bake for 18-20 minutes until puffed and golden.
- 6 Sprinkle with cheese and scallions, then return to oven for an additional 2 minutes.
- 7 Serve immediately with a sprinkle of black pepper.
