- 1 cup baby potatoes, halved
- 1 cup carrot coins
- 1/2 cup red onion, wedges
- 1/4 cup maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Steps
- 1 Preheat oven to 400°F.
- 2 Toss potatoes, carrots, and onions with olive oil, garlic powder, salt, and pepper on a sheet pan.
- 3 In a small bowl, mix maple syrup and Dijon mustard.
- 4 Arrange sausages on top of vegetables and brush with half of the glaze.
- 5 Roast for 20 minutes.
- 6 Flip sausages and vegetables, brush with remaining glaze, and roast another 10 minutes until sausages are cooked through and vegetables are tender.
- 7 Garnish with parsley before serving.
