- 1 9-inch pie crust, store-bought or homemade
- 2 cups fresh mango, diced
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1/2 cup water
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
Steps
- 1 Preheat oven to 375°F.
- 2 In a saucepan, combine mango, sugar, cornstarch, and water. Bring to a boil over medium heat, stirring constantly.
- 3 Boil for 2 minutes until thickened. Remove from heat and stir in lemon juice and vanilla extract.
- 4 Pour the mango mixture into the pie crust.
- 5 Bake for 30 minutes or until the crust is golden brown.
- 6 Let cool before serving.
