How to Fold Batter Without Deflating It

Learn the gentle art of folding batter to keep it light and airy without losing volume.

Notes

Be patient and gentle to maintain the airiness of your batter. Overmixing can deflate the batter and result in a denser texture.

Steps

  1. 1 Prepare your batter and any additional ingredients you plan to fold in.
  2. 2 Use a large spatula or wooden spoon to gently cut down through the center of the batter.
  3. 3 Sweep the spatula across the bottom of the bowl to pick up some batter from the base.
  4. 4 Gently turn the spatula over and fold the batter back onto itself.
  5. 5 Rotate the bowl with each fold to ensure even mixing.
  6. 6 Continue folding until just combined, avoiding overmixing.
  7. 7 Add ingredients in batches if necessary, folding gently each time.
  8. 8 Stop folding as soon as no streaks of the added ingredient remain visible.
